Hi! Tomorrow, I've been invited to Villanova University Football game.
I did not buy the ticket but will go to the tailgating.
I wanted to bring something not the store bought, because seems like most of people will bring some food, probably, premade..
I decided to make raisin cookies with little bit of pumpkin spices!
2 tsp pumpkin spices
2 tsp pumpkin spices
Ingredients: 2 cups all-purpose flour, 1 tsp baking powder, 1 tsp salt, 1 cup butter (room temp), 1 cup of white sugar, 1 cup of brown sugar, 2 eggs, 1 tsp vanilla extract, 1/3 cup water, 1/2 raisins,
3 cups oats, 1 cup raisin, 2 tsp pumpkin spices
Preheat oven to 400F!!!!
Soak 1/2 cup of raisin in 1/3 cup of water (room temp water..)
In a bowl, add 2cups of flour
1 tsp baking powder
1 tsp salt
mix well
Add 1 cups of soften butter (I used un salted from Trader's Joe)
Mix well!
Add 1 cup of white sugar
Add 1 cup of brown sugar
2 eggs!
1 tsp vanilla extract
Mix well
Add 2 tsp of pumpkin spices
Add soaked raisins
Add dried 1 cup raisins
Add about 3 cups of oats. I used Steel Cut Oats and mix well with hand or spatula.
I think this oat makes the cruncher style that shortening will make.
Also, because we are not using the shortening, we can cut some calories..!!!
Roll a small cookies and bake it for 10 minutes.
My oven is pretty week, so I baked it for 10 min. with 400F, but normally with bigger oven, it will take about 7-8 min. with 350-370F.
Cool them completely and serve with some milk!
